I used to buy the fresh, uncooked, tortillas when we lived in Utah and lived off those everyday. But alas, I have not been able to find them anywhere here on the East Coast. Tragedy, I know.
I recently came across a tutorial on our best bites for making homemade tortillas and decided I needed to make some. However, it took me weeks of staring at the recipe to even consider it. So, with lots of courage I finally did it last night for dinner.

Let me just tell you this: so quick and easy!! shocker. However, they were tricky and didn't turn out how I would have liked them (so maybe not easy, I don't know). They were kind of chewy and not as flexible as I like. Also, just look at them; they look like a botox job gone wrong-no joke. I say authentic, but I've seen those Cafe Rio people at work and they never have a bad botox job with their tortillas. Well, I have decided that I'm not allowed to buy store bought tortillas until I perfect the homemade ones. Which means I might be making these everyday because I will die without having my fill of burritos.

fry the rice in oil or butter for a couple of minutes before adding the water. With the water add a chicken bouillon cube (seriously this is good). Then after the rice is done add about 1/8th or a 1/4 cup of lemon juice to the rice. So yummy
Quick beans: heat together all the ingredients below.
1 - 2 cans of black or pinto (black is the best) beans
1 small can of enchilada sauce or packet of taco seasoning
1 can of corn
cut up fresh or canned tomato (fresh always better)
now put the rice and beans on top of your tortillas and try not to eat it too fast.
